Heirloom tomato & cucumber Gazpacho
with basil lime sorbet
Grilled Cobia with a fennel cabbage sauté
Served atop a summer corn grit cake with tomato consommé
Seared pork belly with green tomato chow chow
Paired with a squash fritter and a petite tomato pie with a Gruyere topping
Vanilla bean panna cotta
nestled in a summer berry coulis with an amaretti crumble

Pairing wine to tomatoes is trickier than you may think, the obvious idea of Italian wine with tomatoes is handy, but falls short of being practical. Italy, itself, makes a dizzying array of wines and unique regional styles from its three-thousand indigenous wine grapes. A tomato’s natural acidity and contrasting sweetness makes it ideal with light citrusy whites, lush but zippy roses, and very fresh (needs to compete with a vine-ripened tomato after all), bright, light-bodied (not light flavored!) and aromatic red. To that end, we’ve chosen some favorites that are sure to play nice with Lindsey’s entire menu and, of course, the utter deliciousness of a fresh, ripe, summer tomato. As always, we showcase small farm and family producers, craftspeople, and artists making #realwines without pesticides, chemicals, and believe in farming organically and biodynamically.
